Igor Arent-Rabiej: The Craft of Simplicity

Igor Arent- Rabiej: The Igor Arent- Rabiej: The At Craft Restaurant, inside The Bridge Wrocław MGallery on Ostrów Tumski, chef Igor Arent-Rabiej has built his cooking around a simple philosophy: let the product do the talking.

Leading the kitchen since 2021, Arent-Rabiej has shifted from modernist techniques to what he calls “postmodernism, meaning simplicity,” preferring a few outstanding ingredients over overly complex plates. That approach defines Craft’s modern Polish cuisine, which highlights seasonal produce from trusted Lower Silesian suppliers while staying rooted in traditional flavours.

The restaurant has earned widespread recognition, including Best Hotel Restaurant at the 2023 Food Business Awards, a place in the Poland 100 Best Restaurants guide in 2024, and two Gault&Millau toques (13.5 points) in the 2026 guide. Current dishes include their signature Beef tartare that has been part of the menu since the very beginning. In the current menu, it is paired with lightly pickled vegetables, beef XO sauce and egg yolk.e. We also recommend the blood sausage with baked apple ketchup, crunchy onion and house-made fermented vegetables or the Sea trout, grilled cucumber and zucchini and almond puree.

For Arent-Rabiej, Craft is less about showing off than knowing when to stop, allowing exceptional ingredients to take centre stage. At Craft, we want every plate to have a reason to be there.”
